Ingredients:
2 lb. lean ground beef
3 tbsp. chili powder or taco seasoning mix
4 cloves garlic, minced
1/2 tsp. cayenne pepper
1 large tin chopped tomatoes
18 – 6″ corn tortillas
1 – 24 oz. jar salsa
1 c. sliced onions (green, red or yellow onion)
2 c. sour cream
1 1/2 c. shredded Cheddar cheese
1 1/2 c. shredded Monterey jack cheese
Directions:
Brown beef in large sauté pan. Drain and add seasoning and tinned tomatoes. Simmer for 10 minutes.
Preheat oven to 375 degrees. Grease the bottom of a 9″ x 13″ pan. Put a small amount of meat mixture in bottom of prepared pan. Cover with layer of tortillas. Spread one-third of salsa over tortillas. Spread half of remaining meat mixture over that. Sprinkle with half of the onions. Drop half of the sour cream over the onion layer. Sprinkle one-third of the cheeses over that. Repeat layering with tortillas, salsa, meat mixture, onions, sour cream and cheese. Finally layer with tortillas, salsa and remaining cheese. Bake for 30 – 45 minutes, until heated through and the cheese melts. Allow to sit for 10 minutes before cutting into pieces to serve.
Excellent served with guacamole and additional sour cream. Sliced hot peppers would add a kick.
