This is a recipe I created because I love lamb, eggplant and moussaka. The problem is that when I make moussaka it is a fairly involved recipe that takes quite a time commitment. Even though the result is delicious, I don’t always want to spend the time. If that is the case, I throw some things together in a what I call my moussaka-like dinner. My recipe is not exact on amounts because it’s not that kind of recipe.
Moussaka-like One Dish Dinner
potatoes, cleaned and cubed
onion, chopped
garlic, sliced thin
eggplant, chopped
ground lamb or cubed lamb meat
salt, pepper, cinnamon, oregano
tinned tomatoes, crushed
Fry potatoes till browned and partially cooked, season with salt and pepper, remove from pan. Soften onion, then add garlic and stir a couple of minutes, add to potatoes.
Season and brown lamb (breaking up big chunks if using ground meat), drain and set aside. Drain pan mostly.
Saute eggplant in remaining drippings until lightly brown. Season with salt and pepper. Add tin of tomatoes, cinnamon and oregano. The cinnamon is important – don’t skimp.
Put onions, garlic and lamb back into pan and simmer for a few minutes.
Add potatoes and simmer till everything is cooked through.
